I have been gluten free for 6 to 7 months.  At first I tried brown rice tortillas.  Yuck!  Recently I got a serious craving for flour tortillas.  I went out and bought a tortilla press and tried a recipe using buckwheat flour.  Not it.

I then found this amazing recipe and yes once again I tweaked it to suit the ingredients on hand.  Gluten Free Flour Tortillas satisfied the craving!  I used Expandex Modified Tapioca Starch and King Arthur Ancient Grains Flour Blend.  The flour blend replaced the fava flour which I didn’t have and didn’t want to go to the store for.  Melted and slightly cooled coconut oil was the oil.

Using my tortilla press and 2 plastic sandwich bags I made some of the best tortillas I have ever tasted!  The first one came off the press so to speak and was greeted with a big slatering of butter before making it’s way to my mouth.  The whole production line shut down for a few minutes while I savored and satisfied my craving.

Friends stopped by while I was getting the post ready to go. Of course I had to share.  These past the gluten eating people test.  Flour tortillas are once again a part of my life.
