My wonderful son gave me an amazing Christmas gift, a gift card for Kindle books. As luck would have it there is a kindle version of Babycakes. For those of you who aren’t familiar with the bakery. It is a bakery in New York City that specializes in Vegan and mostly gluten free products. Thanks to my Ipad and Kindle App I now have a wonderful copy of this book.
I have read and re-read the book. It is amazing and if all the recipes are as amazing as the one I tried, I am in for some wonderful baking experiences. I made the Gingerbread and OMG let me tell you even with my tweaking (As we all know I can’t do a recipe as written. It seems to go against my character.) it was an amazing recipe. I did leave off the frosting from the finished product and used King Arthur Gluten-Free Whole Grain Flour Blend.
The recipe called for a 7 x 4 x 3 inch pan which I didn’t have. I used my Wilton 4-cup Mini Loaf Pan.
The recipe made 4 wonderful mini-loaves plus 2 cupcakes. Three of the loaves are wrapped in foil and in my freezer to enjoy later. Guess where the 2 cupcakes and other loaf of bread went? I look forward to trying some of the other recipes in the book. We have some good eating ahead.
